Rocky Road - An Australian Patisserie!

One of the features of a stay with us is the plate of Rocky Road that we hide in the fridge for our special guests.
Lots of people have asked for the recipe, so here it is!
Rocky Road du Huelgoat (Serves 6)
This is a very easy treat, that requires little cooking. It’s fun to make with the kids, too.
We have our own favourite blend of chocolate, but you can use whatever you like the best.
Ingredients
400g Dark Chocolate (70% Cocoa)
600g Milk Chocolate
120g Marshmallows
120g Nuts - your favourite… hazelnut, walnut or almonds all work well.
120g Glacé Cherries
50g Shredded Coconut
Method
Toast the nuts in a moderate oven, then remove to cool
If you are using hazelnuts or another variety, you will need to remove the skins
Chop the nuts, marshmallows and glacé cherries and mix together
Using a double boiler, melt the chocolate together until it becomes liquid. If you don’t have a double boiler, you can use a metal mixing bowl over a saucepan of boiling water or melt it in the microwave.
While the chocolate is melting, line a 1kg loaf tin with baking paper and put to one side.
Take the melted chocolate off the double boiler, let it cool slightly and mix in the chopped ingredients
Before the mixture cools, pour it all into the loaf tin and smooth off the top, sprinkle with some extra coconut (or other decorations) if you want.
Cover the tin in plastic wrap and refrigerate for at least six hours.
Before serving, chop into bite-sized pieces and arrange on a plate!
